The Arrigoni family is proud to claim to be the largest producer of Taleggio in the world. It originates from the region between Bergamo, Milan, and Cremona. Taleggio is regularly washed with brine during its minimum 60-day aging process to ensure optimal development of the rind. The cheese was traditionally matured in Alpine caves, deriving its unique flavour from the bacteria that thrived up there. Despite a very strong smell, Taleggio is actually mild flavoured with fruity and nutty notes. Deliciously creamy if you melt it on top of your lasagne or pasta dish, it also works beautifully with a radicchio or rocket salad.
